On your device, and in your normal encrypted iCloud device backup. Nothing is stored on our servers, so restoring your iPhone from backup restores your collection. See the Privacy Policy for details.
Baseline market prices refresh automatically about once a day. If a value looks stale, opening the app on a connection lets it pull the latest.
Restore the new phone from your iCloud backup and Shadowless comes with it. You can also use "Export collection" to save a copy of your data.
